Mom's spaghetti (Spaghetti with sausage and mushrooms)

My kids love pasta and that's great because pasta dishes can be quick and easy to make. I've noticed that my kids prefer a tomato-based sauce over a (heavy) cream sauce. A bolognese or meatball spaghetti used to be my go-to. However, one day I forgot to get minced meat and sausage was the only thing I had that I could imagine as a replacement for minced meat. 

I tried making spaghetti with sausage and it came out great. It was even faster than making a bolognese or having to prepare all those meatballs. I have added various vegetables to the recipe and most of the time it's a good fit. I like mushrooms or spinach the most. But the veggies are optional, just the sausage is also delicious. 

To start, you have to choose a nice and tasty sausage. I use Morrocan sausages made from lamb meat. Spicy is honestly the best choice, but because my kids are too young for spicy food, I stick to regular sausages. They still are full flavor. An Italian sausage might be just as good. 

The ingredients needed are:

- olive oil

- salt and pepper to taste

- 1 medium-sized onion

- 5 cloves of garlic (minced) 

- 6 to 8 sausages (spicy, none spicy, or a mix)

- 250 grams sliced mushrooms (optional)

- dried Italian seasoning

- can peeled tomatoes 

- 2/3 pack of spaghetti

Recipe

 1. In a large skillet heat the olive oil and add the sausage. Cook until brown.

2. Dice the onion and garlic. 

3. Boil water in a large pot. 

4. When brown, remove the sausage from the pan. Leave the pan on heat and add the onions and garlic to the pan. Cook for about 5 minutes on medium heat. 

5. Add the mushrooms and Italian seasoning and cook together for another 10 minutes.


6. Add the can of peeled tomatoes to the pan and mix along with the onions, garlic, and mushrooms. Fill the empty can with water and set it aside.

7. Add spaghetti to the boiling water. 

8. Cut the sausages into pieces and add them to the mixture. Mix everything and let it incorporate for about 6 to 8 minutes. 



9. Add the can of water to the mixture, put on the lid, and let it simmer on low heat. 

10. Once the spaghetti is cooked, remove the water but keep about 200ml of that starchy water to add to the sauce later on. 

11. Add the spaghetti gradually to the sauce and mix everything. When half of the spaghetti had been added to the mixture add the starch water to the sauce and stir until the water is fully incorporated into the sauce.



12. Continue adding the rest of the spaghetti until the spaghetti is fully covered. 

13. Serve while it's still hot (and add cheese if you like)!
